nutritious breakfast of oats and apples
oats. as i am discovering, are popular in lots of postpartum recipes, but this is my favorite way to make delicious overnight oatmeal. these ingredients made our house smell delicious last night and it was ready to eat when we got up early to start the day. i liked this recipe. it was sweet and seasoned well, hearty and filling. i added a little ghee butter to my bowl and a sprinkle of collagen for extra nutrition.
recipe for overnight oats
- 2 cups of sliced apples
- 1/4 cup of brown sugar
- 1 teaspoon cinnamon
- 2 cups of oatmeal, old fashioned or steel cut oats
- 2 cups of milk
- 2 cups of water
- a pinch of salt
instructions:
layer these ingredients in the crockpot in the order listed. sliced/ chopped apples first. i used pink lady apples, but grannie smith apples are my favorites. do not stir. turn setting to low for 8-9 hours. stir before serving. i am curious if this could cook on warm in the crockpot or maybe 5-6 hours. i am planning on trying this recipe again.
i assembled this last night before going to bed and it was ready to eat for breakfast this morning. it was delicious. i did add a little butter because i could! pecans would be delicious and dried fruits such as cranberries, apricots, or raisins. i would make it again. i purchase my organic apples from misfits market. they are fighting food waste with organic produce and sustainably sourced pantry staples delivered to my door. we have tried lots of new recipes since starting this weekly food box.
postpartum goodness:
this would be an awesome meal for the postpartum period because it is easily digested and quick to prepare. oatmeal is great for breastfeeding moms because it promotes milk production.
oats contains iron and helps build energy in the postpartum body and strengthens the digestive organs. it is also a good source of fiber aiding digestion.
