eat dates during postpartum. snickers dates are dried dates stuffed with peanut butter and a pecan, then dipped in dark chocolate and taste like a snickers candy bar. truly.
wow, who knew i would love dates and i am just trying them for the first time!
i use dates when cooking for my postpartum clients. as a doula, i love preparing meals for them. sometimes it’s creating a healthy breakfast, lunch or doing meal prep for supper. dates are so good for us. i add them to a breakfast of baked oatmeal. i include them in energy bites for mid-morning snacking or middle of the night when up with the baby. i am always looking for new ways to use dates for my birth families. i have made granola bars and i plan on trying a smoothie soon. but these snickers dates are my favorite so far.
here is how i make the “snickers” dates for my postpartum clients:
i slice open the date and remove the pit. using a small spoon i fill the inside with some kind of nut butter and then i squeeze in a pecan and squish it closed. i use the smaller dates known as deglet noor dates. the fresh larger medjool dates work well too.
i melt some dark chocolate chips with a little coconut oil in the microwave and dip the dates . it’s really more of a dunk them and let the extra chocolate fall off. place on a parchment paper on a cookie sheet and then freeze for a few minutes to harden the chocolate. these will keep in the fridge for a couple of weeks if they last that long.
